Originally the town ice works the property was purchased by the Finlay's, 
G.B.F, Gantheaume Bay Fisheries was born and proceeded to export fish globally.
In its prime G.B.F was bought to a crippling halt by the pilots strike in 1989,
The Finlays overcome this by creating there own market.
Finlays Fresh Fish BBQ was born and become an instant hit among locals and travelers alike,
before too long people began coming to sleepy little Kalbarri just to experience the Finlays atmosphere that was gaining popularity rapidly.
Finlays with its fresh local produce and unique atmosphere become an icon to the town,
It is for this reason that after Gary Finlay closed the restraunt in 2008 he soon reopened the restraunt briefly due to public demand.
With Gary wanting to move on but also wanting to not kill an Icon, Di and Wazz long time Kalbarri Locals stepped in to manage Finlays, Di is an accomplished chef with over 30years experience.
​Di is also an avid collector of all things, with this and her quirky personality it proved to be a natural transition. In late 2015 with Di opting out to retire and Gary putting the property on the market, Emiley Aylott took control of the business and now offers FRESH KALBARRI fish on the menu for the first time in many years.
Emiley and her partner Wayne offer great hospitality, basic meals with great produce and pride themselves on providing a family orientated atmosphere and welcome all who choose to visit there unique venue, Also began processing Fresh local fish on site again or the first time in many years....From the boat to your plate.

​In August 2017 the finlays building and property was deemed to far out of date and needing huge renovations that soon become a need for a complete rebuild.....After a short closed period Wayne and Emiley made the decision to bring FINLAYS in to modern times and relocate the buisness to a more modern and comfortable venue at the PALM RESORT Kalbarri........Due to open end of September 2017
